Tofu Burger
Use the sturdier water-packed form of tofu to make these
tasty burgers. The tofu is cooked twice, to make it
stronger and easier to handle.
Makes:
6 burgers
PREP TIME: 15 minutes
COOK TIME: 16 minutes
1 package (14 ounces) firm tofu, water packed, drained
1 cup bread crumbs
1-1/2 tablespoons Italian herb seasoning
1 teaspoon garlic salt
1/2 teaspoon black pepper
1/4 cup fresh Parmesan cheese, grated
1 egg
1/2 cup milk
1 tablespoon olive oil
6 hamburger buns
Cut tofu crosswise into 12 slices. Spray a large skillet with nonstick
cooking spray; add tofu. Cook 5 minutes on each side over medium heat.
Remove tofu from pan and cool to room temperature.
Combine bread crumbs, Italian seasoning, garlic salt, pepper, and parmesan
cheese in medium bowl. In a separate bowl, whisk egg and milk.
Dip each tofu slice in milk and egg mixture, then dredge in bread crumbs.
Place slices in large skillet with olive oil. Sauté 3 minutes
on each side over medium heat.
Use 2 tofu slices on each sandwich. Spread the cut
side of each bun with Pesto
Mayonnaise; add tomato slices and lettuce, if desired.
