Southwestern Chicken Spaghetti 

Give traditional spaghetti a new twist with chicken, black beans and green chilies!

Makes:  6  servings

PREP TIME: 15 minutes
COOK TIME:  15 minutes

1 package (1.25 ounces) spaghetti sauce mix
1-3/4 cup water
1 can (6 ounces) tomato paste
1 tablespoon oil
1 pound boneless, skinless chicken breast, cut in 1/2-inch strips
1 teaspoon cumin
1 can (15 ounces) black beans, drained and rinsed
1-1/2 cups frozen corn
2 cans (4 ounces each) green chilies
12 ounces spaghetti, cooked
1/8 teaspoon ground red pepper (optional)
2 tablespoons fresh chopped cilantro (optional)

Prepare spaghetti sauce mix with water and tomato paste according to package directions.  Keep warm.

Heat oil in skillet.  Add chicken and stir-fry over medium high heat until meat is cooked through.  Add the cooked chicken, cumin, black beans, corn and chilies to the spaghetti sauce; mix.  Heat through.

Serve over hot spaghetti and sprinkle with ground red pepper and cilantro, if desired.
