Durkee® LePak® Cajun Seasoning gives recipes real southern Louisiana flavor.  Add to traditional gumbos, creoles and soups.  Sprinkle Cajun Seasoning on hamburgers, steaks, grilled chicken or fish for new menu excitement.  Create new dishes by adding Cajun Seasoning to sauces and casseroles.


Cajun Crab Cakes

Margarine or butter  1 Tbsp.  3 Tbsp. 
Red pepper, diced 1/4"  1 oz. or 1/4 cup  3 oz. or 3/4 cup 
Green pepper, diced 1/4"  1 oz. or 1/4 cup  3 oz. or 3/4 cup 
Green onion, sliced  1 oz. or 1/4 cup 3 oz. or 3/4 cup 
Crabmeat, flaked  1 lb.  3 lbs. 
Egg  1 each  3 each 
Mayonnaise 1 Tbsp. 3 Tbsp.
Lemon juice 1 Tbsp. 3 Tbsp.
Dijon mustard 1 Tbsp. 3 Tbsp.
Bread crumbs, dry 1/2 cup 1 1/2 cups
Durkee LePak Cajun Seasoning 1 Tbsp. 3 Tbsp.
Margarine or butter 2 Tbsp. 1/4 cup + 2 Tbsp.
ZESTY DIPPING SAUCE:
Mayonnaise 1 cup 3 cups
Dill relish 1 Tbsp. 3 Tbsp.
Dijon mustard 1 Tbsp. 3 Tbsp.
Durkee Lepak Blackened Seasoning 1/2 tsp. 1 1/2 tsp.

Melt margarine and sauté peppers and onion.

In large bowl, combine crabmeat, sautéed vegetables, egg, mayonnaise, lemon juice, mustard, bread crumbs and Cajun Seasoning.  Mix well.

Form in patties, approximately 2 1/2 oz.  Chill if desired.

To cook, heat margarine in heavy skillet or grill.  Cook crab cakes on low heat until browned and cooked through.  Hold for up to one hour.

Combine all ingredients for Zesty Dipping Sauce and serve with Cajun Crab Cakes.
