| Heat a cast
iron skillet over very high heat for about 10 minutes. The skillet
must be super hot; white ash may appear on the bottom of the skillet.
While skillet is heating, melt butter in a large, flat pan. Dip each
fish fillet in melted butter. Generously sprinkle and rub Durkee®
Louisiana Cajun Seasoning on both sides of fish. Place each fillet
in hot skillet and cook until done. Serve immediately. |
