Cinnamon Maple Breakfast Sausage 8 Servings 25 Servings
Pork, lean 4 lbs. 12 lbs.
Bacon 2/3 lb. 2 lbs.
Pork fat 1 lb. 4 lbs.
Durkee® Ground Black Pepper 2 tsp. 6 tsp.
Water 1/3 cup 1 cup
Durkee® Ground Sage 1 Tbsp. 3 Tbsp.
Salt To taste To taste
Durkee® Cinnamon Maple Sprinkle 1 Tbsp. 3 Tbsp.
Durkee® Ground Thyme 1/2 tsp. 1 1/2 tsp.
Cut pork, bacon and fat into chunks (bacon may be substituted for pork fat). Mix seasonings in water and let set for 20 minutes. Grind meats and fat using a grinder. Blend meat and seasoning mixture together. Mixture may be stuffed in casings or used as patty sausages.
