Marrons Jerk Pork Yield: 15 Servings
Durkee® Jerk Seasoning 1/2 cup
Green onion, chopped 6
Lime juice 2 Tbsp.
Pork loin chops (or any other pork cut) 5 lbs.
Prepare spice paste by grinding Durkee® Jerk Seasoning with green onions and lime; grind with mortar or on a cutting board with the bottom of a plate until you have a smooth paste. Cover the pork with the paste; marinate 1 hour or overnight. Cook pork on mid-hot grill until desired doneness. If desired, toss some Durkee® Jerk Seasoning on hot coals to produce a spicy smoke. Serve with raw onion.
