Southwestern Pasta

Chicken breast, cut into strips 2 lbs.  6 lbs. 
Water  1 qt.  3 qts. 
Durkee Viada Fajita Marinade  1/3 cup  1 cup 
Oil  2 Tbsp. 1/3 cup 
Vegetable or tomato juice, spicy type  1 qt. 3 qts. 
Green chilies, canned, diced, drained  8 oz.  1 lb. + 8 oz. 
Red onion, coarsely chopped 1 qt. or 12 oz. 3 qts. or 2 lbs. + 4 oz.
Green peppers, coarsely chopped 1 qt. or 12 oz. 3 qts. or 2 lbs. + 4 oz.
Salt 1 tsp. 1 Tbsp.
Pasta, Bowtie 2 lbs. 6 lbs.

Combine chicken, water and Fajita Marinade.  Marinate at least one hour.

Heat oil, sauté chicken until browned and cooked thoroughly.  Remove chicken and keep warm.

To same pan add vegetable juice, vegetables and salt.  Cook until sauce begins to thicken.  Add chicken and simmer 10 minutes.

Cook pasta until just tender.  Rinse and drain well.

Top pasta with sauce.  Garnish with shredded Cheddar or Monterey Jack cheese and chopped fresh cilantro.
