Durkee® Viada Fajita® Marinade provides authentic Mexican flavor for beef, chicken, pork, shrimp or vegetarian fajitas.  Savor baked chicken, beef roasts or pork chops prepared with Fajita Marinade.  This blend makes Mexican food tastier than ever.


Vegetable Quesadillas
 
6 Servings 24 Servings
 Onion, chopped, 1" pieces 9 oz.  2 lbs. + 4 oz. 
 Yellow pepper, cut into strips 1 each or 5 oz. 4 each or 
1 lb. + 4 oz. 
 Red pepper, cut into strips 1 each or 5 oz.  4 each or 
1 lb. + 4 oz. 
 Zucchini, sliced  2 small or 6 oz. 8 small or 
1 lb. + 8 oz. 
 Mushrooms, sliced 2 cups or 8 oz.  2 qts. or 2 lbs.
Water  1 1/2 qts.  1 gal. + 2 qts. 
Durkee Viada Fajita Marinade 1/2 cup 2 cups
Oil 2 Tbsp. 1/2 cup
Flour tortillas, 6 inch 12 each 48 each
Smoked cheese such as Mozzarella, Monterey Jack or Gouda 9 oz. 2 lbs. + 4 oz.

Combine vegetables, water and Fajita Marinade.  Mix well and marinate at least one hour.

Heat oil in large pan.  Drain vegetables,  Sauté until vegetables are just crisp tender.

On a sheet pan, spread half of the tortillas.  Top with sautéed vegetables and cheese.  Top with remaining tortillas.

On a grill or non-stick skillet, heat quesadillas flipping once just until cheese melts and tortilla becomes crisp.

Cut each quesadilla into 6 wedges.  Serve with salsa or spicy sour cream.

To make spicy sour cream, add Durkee Chili Powder to sour cream.
